Lavender Wait Cake With Lemon Glaze

It's lavender season here is Sonoma County! We were just gifted some Haus Lavender + lemon from our neighbors at Haus, it pairs perfectly with our Blood Orange + Meyer Lemon shrub, both in the glass and in this cake. Note that you need some time for the cake to sit and mellow.

Lavender Wait Cake With Lemon Glaze


Ingredients:
  • 1 cup (200g) sugar
  • 4 oz (1 stick, or 115g) unsalted butter at room temperature
  • 1 large egg
  • 1 lemon
  • 1 cup (115g) almond flour
  • 1 cup (135g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon fine kosher salt
  • 1/2 cup full-fat Greek yogurt
  • 1/4 cup water
  • 1/2 cup Haus Lavender + lemon (or use brandy)
  • 1 teaspoon vanilla
  • 1 cup (100g)sliced almonds
  • 2 tablespoons Blood Orange + Meyer Lemon shrub
  • 1/2 cup (60g) powdered sugar
  • additional powdered sugar for dusting, optional
Directions:
Preheat Oven to 350.
Grease your pan--I use a false bottom cake pan, but you can also grease and line with parchment a regular 8" cake pan.
Mis together the almond flour, flour, baking powder, baking soda, and salt and set aside. Mix together the yogurt, water, Haus and vanilla and set aside.
Using a Microplane, zest the lemon into the sugar. add the butter and beat until thoroughly blended, , add the egg and beat until fluffy. beat in 1/2 the yogurt mixture, then 1/2 of the flour mix, repeat, ending with the flour mix. beating just until blended.
Pour batter into pan, top with sliced almonds, then bake for 45 min, (A skewer may come out with a few crumbs clinging, this is fine.) If you have a thermometer, use that and pull the cake out when the internal temperature reaches 205-210.
While the cake bakes, mix the powdered sugar and shrub together. This mixture will be runny.
When the cake is done, pour the glaze over the hot cake. It will blend into the cake, this is what you want.
After 15 min, run a spatula or knife around the edge of the cake. (You want to keep it from sticking) Let the cake cool completely. Then WAIT 12-24 HOURS. (I know this is hard, just do it, the cake will firm up and all the lovely flavors blend together).
Right before serving, sift some powdered sugar over the cake, serve with strawberries or your favorite summer fruit, and this Haus + Little Apple Treats cocktail.
