Whole Apple Vinaigrette

Makes 1 1/2 cups
Our go-to for tossing with salad greens, roasted vegetables, and nuts as a flavorful side dish to pair with grilled protein for a quick and easy dinner!
Ingredients

1/2 cup apple cider vinegar
- 3/4 cup good olive oil
- 1 tablespoon Dijon mustard
- 1 large shallot, chopped
- 1 small apple, peeled, cored and chopped into chunks
- Salt and pepper to taste
Directions
Blend all ingredients together in a high speed blender. You can also use a food processor, but the apple may not blend completely smooth. It will still taste great, though.
