Limited Release: Triple-Fermented Apple Cider Vinegar + Honey
Our original apple cider vinegar goes through two fermentations. In the first fermentation, the sugar in the apple juice changes to alcohol. In the second fermentation, the alcohol changes to acetic acid.
The way we make vinegar -- the traditional way -- the second fermentation is really slow. It takes between 13 and 18 months to make a batch of vinegar.
Last year we decided to try something new.
We added a generous amount of local organic honey to a finished vinegar barrel. The sugar in the honey first turned into alcohol and then slowly into vinegar. It took another year to complete, but it is oh-so-worth it! This triple-fermented vinegar isn't sweet, but you can smell the honey in it. It's extremely perfumed and delicately aromatic. You can use it for everything--but do it slowly, since our supplies are extremely limited of this one!
