Passionfruit, Blood Orange and Guava Shrub

POG usually means passionfruit, orange, and guava. Ours takes a little California detour: we use blood orange, plus ripe white guava and passionfruit from California farms. The blood orange keeps all that tropical fruit bright and tart, with a juicy citrus lift that ties everything together. Pour it over lots of crushed ice with coconut water for an easy tropical mocktail, or add coconut rum when you want to take it in a cocktail direction.

Our shrubs begin with apple cider vinegar made from apples grown on our certified organic farm in Sebastopol. From there, we add whole fresh fruit — not just juice — and just enough sugar to balance the acidity, giving each shrub layers of real fruit flavor without making it overly sweet.
