Meyer Lemon + Green Coriander Shrub

Green coriander is the fresh seed of cilantro, picked while it’s still green and juicy, before it dries into the coriander you find in the spice cupboard. The tiny seeds are citrusy, floral, and lightly peppery, with notes that remind us of lemon verbena and pink peppercorn. Paired with fresh Meyer lemons, they make a bright, aromatic shrub with a little herbal lift.

Add a splash to sparkling water with a slice of lemon, mix it into cocktails or mocktails, or whisk it into a vinaigrette or marinade when you want bright citrus with a fresh, herbal edge.

Our shrubs begin with apple cider vinegar made from apples grown on our certified organic farm in Sebastopol. From there, we add whole fresh fruit — not just juice — and just enough sugar to balance the acidity, giving each shrub layers of real fruit flavor without making it overly sweet.
