Roasted Pineapple + Vanilla Bean Shrub

We roast fresh pineapple until it’s deeply caramelized, then infuse it with Madagascar vanilla beans. Roasting brings out rich, golden notes reminiscent of pineapple upside-down cake, while our apple cider vinegar keeps everything bright and balanced.

Add a splash to sparkling water and serve over plenty of ice, mix it into a Dark & Stormy, or drizzle it over fresh fruit.

Like all of our shrubs, this one starts with apple cider vinegar made from apples hand-picked in our Sebastopol orchard. We age it in oak barrels for two years, then blend it with whole fruit and just enough organic cane sugar to let the fruit shine.

Each custom-printed glass bottle is finished with a natural cork, a nod to the wine barrels where our vinegar begins its journey. Recipe cards with cocktail and mocktail ideas are included with every order.
