Bright Blackberry Vinaigrette

This vinaigrette started as a way to use up an abundance of fresh blackberries, but we've discovered that frozen berries work just as beautifully—which means we can enjoy this gorgeous, jewel-toned dressing year-round. There's something magical about how the berries blend with our Blackberry Lemonade Shrub to create layers of berry flavor that are both bright and complex.

The shallot adds just enough savory depth to keep this from feeling like dessert, while the blackberries give it a beautiful purple hue that makes even simple greens look special. We love it drizzled over butter lettuce with crisp apple slices and a handful of fresh blackberries—it's like summer in a bowl, no matter what season it actually is.

Ingredients:

  • 1/4 cup blackberries (fresh or frozen)
  • 1 small shallot, finely chopped
  • 2 tbsp Blackberry Lemonade Shrub
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions: Add everything to a blender or food processor and blend until smooth. If it's too thick, add a splash of water to reach your desired consistency.
