Our Famous Whole Apple Vinaigrette Recipe

This is our absolute favorite vinaigrette recipe—the one we're always sharing with friends and customers! We love how fresh apple adds natural sweetness and body to balance the tang of our farm-made vinegar. It's perfect tossed with salad greens, but we also love it drizzled over roasted vegetables, used as a marinade, or mixed with warm potatoes for our house potato salad.

The roasted apple variation adds deeper, caramelized notes that pair beautifully with autumn flavors and heartier dishes. Either way, this versatile dressing will become a staple in your kitchen—just like it is in ours.

Whole Apple Vinaigrette (makes about 1.5 cups)

  • ½ cup Little Apple Treats Apple Cider Vinegar
  • ¾ cup good olive oil
  • 1 tablespoon Dijon mustard
  • 1 large shallot, chopped
  • 1 small apple, peeled, cored and chopped into chunks
  • Salt and pepper to taste

Blend all ingredients together in a high-speed blender until smooth. You can also use a food processor, but the apple may not blend completely smooth—it will still taste great, though! Store in the refrigerator for up to 2 weeks.

Try This - Roasted Apple Variation: Toss the apple pieces with a pinch of salt and a drizzle of olive oil and roast at 400 degrees for 10-15 minutes until soft before proceeding with the recipe. The roasted apple creates deeper, more complex flavors.
