Roasted Apple Vinaigrette

Transform your  salads with our Roasted Apple Vinaigrette, where the natural sweetness of roasted apples meets the bright tang of our apple cider vinegar. Roasting the apples brings out their caramelized depth, creating a velvety dressing that clings perfectly to hearty greens and  vegetables.
Roasted Apple Vinaigrette (Makes about 1 cup)
Core 2 medium apples (leave skin on) and toss with a splash of olive oil. Roast at 400°F for 15 minutes until soft. Once cooled, blend with 1/4 cup apple cider vinegar, 1 small shallot, 1 tablespoon Dijon mustard, 1/2 teaspoon kosher salt, and 1/2 cup olive oil until smooth.
